Summer's Bounty

As the summer meanders along, gardens and farmer's markets yield beautiful vegetables and fruit, one more tempting than the other.
Grilled Steak Salad
A cold grilled steak salad makes a lovely summer meal. You can purchase the packaged mixed greens or mix your own.
Grilled Cornish Hens with Sun-Dried-Tomato Pesto
Since the tomato pesto here is made in a processor or blender, you have to make more than the small quantity needed. Use leftover pesto later in the week on grilled vegetables or fish. It’s also a delicious addition to sandwiches, not to mention pasta.
Apricot Nectar Ice
Fresh and light Apricot Nectar Ice makes a refreshing dessert.
Roasted Corn
Spread the corn with sage, thyme or dill butter. This is the perfect complement to grilled foods, and makes an easy, but delicious vegetable.
Curried Scallops with Spinach
With few ingredients and even fewer steps, this curry is a cinch to make quickly. Serve it with rice.
Honey-Baked Figs with Ice Cream
Use purplish-black Mission figs, green-skinned Calimyrnas, or both for this great-tasting dessert. Give the figs a gentle squeeze to check for ripeness; they should be quite soft.
Roast Tomatoes With Rice
Use scooped-out tomato cups for your vegetables in this clever dish.
Crispy Pesto Potatoes
Add a touch of Italian to your potatoes.
Caprese Salad
Caprese salad is one of the simple pleasures of summer. Ripe, garden-fresh tomatoes and high-quality mozzarella cheese are key, as is the best, fruitiest extra-virgin olive oil you can find. The tomatoes' great flavor pops when properly seasoned. Happy summer!
Crab Salad with Chiles and Cilantro
Sour cream, diced chiles and sweet crabmeat combine to make a succulent presentation dressed with chopped onion, fresh cilantro and lime juice. Just for fun serve on fish-shaped platters with chips on the side.
Grilled Zucchini with Fresh Mozzarella
If your prefer a stronger cheese flavor, try goat cheese instead!
Blueberry Cornmeal Shortcakes
Top with vanilla-flavored yogurt, which goes well with plump blueberries. Or, if you prefer, use whipped cream.
Tuscan Tomato Bread Soup with Steamed Mussels
There are many versions of bread soup; this one, based on traditional peasant fare, is as thick as a bread pudding. If you choose, omit the mussels.
Caesar Salad with Shrimp
This modified Caesar dressing contains no egg, but tastes just as delicious as the original.
Picnic Celery & Potato Salad
A few surprises in the dressing, like cream of celery soup, carry this potato salad to new and delicious heights.
Beer-Battered Cod with Tartar Sauce
For a crackling crisp coating, fry the cod in small batches. Too many pieces in the pot cool the oil, and the fish comes out soggy and greasy instead of great.
5-Minute Coleslaw
Quick, easy and delicious. Just the way you like it.
Orange and Avocado Salad with Citrus Vinaigrette
Oranges and avocados team up for a cool refreshing salad that is especially good in the spring and summer. Pretty, too!
Pico De Gallo Shrimp & Avocado Salad
This robust and refreshing salad features sautéed shrimp tossed with Pico de Gallo and served on a salad of mixed greens and avocado slices.  Ranch dressing adds just the right amount of creamy coolness to the dish.
