CB's EZ Grilled "Tapas" Veggie, Cheese & Meat Sandwiches
These "Tapas" make a delicious appetizer or can even be used as a main dish.
Serves: 3-4
Prep Time: 20 minutes
Cook Time: 10-15 minutes


1 loaf of crusty bread
4 tbsp. melted butter
Assorted vegetables like eggplant, zucchini, onions, peppers, lettuces
Cheeses, cold cuts , and condiments

Preparation: Slice bread into serving size – thin enough to “toast” quickly yet thick enough to support food! Slice all vegetables into sizes appropriate to the bread– yet large enough so they don’t fall through the grates and can cook at approximately the same amount of time. I recommend you slice veggies thin and cook them quickly. Slice cheeses and meats into appropriate size for bread . Prepare condiments.

1. Preheat the grill to high.

2. Brush veggies with olive oil; grill them about 3 minutes per side & remove, cover and keep warm.

3. Place bread slices on grill and “toast” turning and brushing the first side with butter. Note: Watch carefully so the bottoms don’t burn – remove and cover to keep warm.

4. Cover grill with aluminum foil or place backing sheet on grates – turn heat to medium.

5. After the aluminum foil or baking sheet is warm place the meat slices directly on the sheet to warm, remove and keep warm.

6. Add slices or spread room temperature cheese on the toasted bread and place on sheet then close lid for 2 - 3 minutes. This will warm the bread, and slightly melt the cheese.

7. Open grill and layer the bread with the warmed meat and grilled vegetables.

8. Serve on warmed plates with condiments.
