Turkey Mandarin and Poppy Seed Salad
What a refreshing summer salad when you have leftover or deli turkey! Serve it with muffins or biscuits and tall glasses of iced tea.

About 5 cups torn red leaf lettuce
About 2 cups torn fresh spinach
1/2 pound cooked turkey, cut into 1/2-inch julienne strips
One 11-ounce can mandarin oranges in juice, drained
1/4 cup refrigerated orange juice
1 1/2 tablespoons red wine vinegar
1 1/2 teaspoons poppy seeds
1 1/2 teaspoons olive oil
1 teaspoon Dijon mustard
1/8 teaspoon fresh ground black pepper

In large bowl, gently toss the lettuce, spinach, turkey and drained oranges.

In small bowl, whisk the orange juice, vinegar, poppy seeds, oil, mustard, and pepper together. Pour the dressing over the salad, toss to mix, and serve immediately.
