Turkey Grape Dijon Salad
This Turkey Grape Dijon Salad is a tasty, light summer meal!

3 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons onion, minced
1 tablespoon Dijon mustard
1 garlic clove, minced
3 cups brown rice, hot cooked
1/3 pound smoked turkey breast, cut into thin strips
1 cup seedless red or green grapes, halved
3/4 cup green onions, thinly
1/2 cup pecans, chopped, toasted
lettuce leaves

Combine oil, juice, onion, mustard and garlic in small bowl; set aside. Combine rice, turkey, grapes, onions, pecans, salt and pepper in large bowl. Pour dressing over salad. Toss to coat, serve over lettuce leaves.
