Open-Faced Turkey Sandwiches
A delicious way to use your Thanksgiving leftovers.

Cook Time: 15 minutes


4 slices bread, (crusty herb or white)
4 tablespoons cranberry-orange relish, divided
8 thin slices turkey*
4 servings mashed potatoes, (about 2/3 cups each)**
2 cups hot gravy, (made from roast drippings)

Place 2 slices of bread on each of 2 plates. (If you prefer, lightly toast the bread first.) Spread 1 tablespoon of relish on each slice. Top the bread with warm turkey slices, and 2/3 cup mashed potatoes. Ladle about 1/2 cup of gravy over each open-faced sandwich and serve hot.

*Leftover cooked turkey may be substituted for the pre-packaged turkey roast.

**Fresh, frozen or instant potatoes may be used.
