Egg & Cheese Waffle Sandwich
This simple and quick egg sandwich is packed with protein to keep kids full and sharp until lunchtime.
Serves: 1
Prep Time: 3 minutes
Cook Time: 10 to 12 minutes


2 round, frozen waffles, about 4 inches in diameter
1 large egg, beaten
1 slice jack or American cheese

Preheat the oven to 400° F. Generously coat a baking sheet with flavorless cooking spray.

Put the waffles on the baking sheet and then spoon the egg over them, spreading it to fill the indentations. Bake for 10 to 12 minutes or until the egg sets and the waffles are crisp.

Top 1 waffle with cheese and then cover with the remaining waffle, egg-side down. Press together and let the sandwich stand for a minute or so to give the cheese time to melt. Serve immediately.
