Slow Cooker Pork with Walnuts and Apples
This simple slow cooker dish is just as good the second day!

1/2 cup chicken stock or reduced-sodium broth
1/4 cup pure maple syrup
2 tablespoons cider vinegar or lemon juice
2 teaspoons stone ground mustard
1 teaspoon rosemary, dried
1 teaspoon garlic salt
1/2 teaspoon sage, dried
2 pounds pork loin or tenderloin, cut into 2-inch chunks
2 tablespoons olive oil or butter
1 onion, coarsely chopped
2 Granny Smith apples, peeled, cored and cut into 8 sections
1/2 cup chopped, toasted California walnuts




In a slow cooker, stir together the broth, maple syrup, lemon juice, mustard, rosemary, garlic salt and sage.

In a large skillet sear pork in oil until nicely browned on all sides.
Place the pork in the slow cooker and stir to coat with the mixture. Top with the onions, then cover and cook on high for 2 1/2 hours.

Add the apples and cook for 30 minutes more or until pork and apples are tender.
Sprinkle with walnuts and serve.
