Peach Tart
A lovely tart that uses both fresh peaches and peach preserves.
Serves: 8 to 10
Prep Time: 10 minutes
Cook Time: 25 minutes


2 eggs, well beaten
2 cups sour cream
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup Smucker's Peach Preserves
1 11- inch unbaked pastry shell or 12 3-inch unbaked pastry shells
2 cups peeled, thinly sliced fresh peaches
toasted slivered almonds
2 tablespoons brown sugar

Preheat the oven to 350 degrees F.

Combine the eggs, sour cream, and vanilla and almond extracts and blend well. Fold in preserves.

Spoon into pastry shell and spread evenly. Arrange the fresh peaches on top of the tart. Sprinkle the top with almonds and brown sugar.

Bake for 25 to 30 minutes, or until mixture is set. Let cool to room temperature on a wire rack. Refrigerate for at least 2 hours before serving.
