Carnation Mashed Potatoes
These mashed potatoes will be the side dish everyone raves about this year! The "secret" ingredient is evaporated milk.

2 pounds (about 6 medium) potatoes, peeled and cut into 1-inch chunks
1 cup NESTLÉ ® Carnation ® Evaporated Milk
1/4 cup (1/2 stick) butter or margarine (we recommend LAND O LAKES® Butter)




PLACE potatoes in large saucepan, cover with water and bring to a boil. Reduce the heat to medium-high and simmer the potatoes, covered, for 15 to 20 minutes or until tender. Drain and return the potatoes to the saucepan.

ADD the evaporated milk and butter and beat with hand-held mixer until smooth. Season with salt and pepper and serve hot.



NOTE: To add even more flavor to the potatoes, add chopped green onions, chopped parsley or cooked, crumbled bacon.



FOR MUSHROOM MASHED POTATOES:

PREPARE the potatoes as above. Melt butter in saucepan; add 1 clove minced garlic and 8 ounces minced mushrooms. Cook over medium heat for 4 to 5 minutes or until any liquid has evaporated.

ADD the potatoes and evaporated milk and beat with a hand-held mixer until smooth and thoroughly mixed with mushrooms. Season with salt and pepper.
