Coleslaw with Ginger and Carrots

4 cups shredded green cabbage
2 cups shredded carrots
2 tablespoons grated ginger
1/4 cup white wine vinegar, plus 2 tablespoons white wine vinegar
1 tablespoon Dijon mustard, plus 1 teaspoon of dijon mustard
1/2 cup light corn syrup




In a mixing bowl, combine the cabbage and carrots.


In another bowl, combine the ginger, vinegar, and mustard. Whisk in the corn syrup. Pour the dressing over the cabbage and carrot mixture and toss to coat. Serve right away.
