California Hamburger
The pesto, avocado and sprouts turn this ordinary burger into one named for the Golden State.

1 medium-size avocados, halved, peeled, sliced
1 1/2 pounds ground beef, very lean
2 small scallions, chopped
1 1/2 tablespoons olive oil
salt, to taste
freshly ground pepper, to taste
8 slices whole wheat bread
1 (8 ounce) container pesto
1 large tomato, sliced
alfalfa sprouts, or leaf lettuce

Light the charcoal grill or heat the broiler. Let the coals get medium hot.

In a large bowl, combine the beef, scallions, oil, salt and pepper and mix gently to avoid mashing the beef. Form into 4 patties. Grill or broil the hamburgers for 6 to 7 minutes on each side for medium-rare. At the same time, grill the bread lightly, about 5 minutes on each side, or toast it in the toaster.

Spread each slice of bread with pesto. Arrange tomato and avocado slices over 4 pieces of the bread and top each with a hamburger. Top the hamburgers with sprouts or lettuce and then with the remaining bread slices, pesto side down.
