Savory Spring Spinach
Everyone will eat and enjoy their spinach when you serve it this way.  Just a little onion, garlic and chicken broth makes all the difference.

1 tablespoon butter
1 large sweet onion, halved and thinly sliced
2 cloves garlic, sliced
2 large tomatoes, seeded and chopped (about 3 cups)
3/4 cup Swanson® Natural Goodness® Chicken Broth
1 bag (11 ounces) fresh baby spinach
ground black pepper

Heat the butter in a 12-inch nonstick skillet. Add the onion and garlic and cook until they're tender, stirring occasionally.
Add the tomatoes, broth and spinach. Cook for 2 minutes or until the spinach is wilted. Season with the black pepper.
Serving Suggestion: Serve with lightly breaded oven-baked chicken cutlets and mashed potatoes.  For dessert serve coffee ice cream with chocolate biscotti.

The Zesty Citrus-Thyme Marinade really makes this recipe. The kabobs go nicely over a bed of rice -brown basmati and wild rice would be a good blend. Heat the remaining marinade and drizzle on top of the kabobs before serving to flavor the rice as well.
