French Silk Pie
Whip up this rich, silken and delicious chocolate pie for easy entertaining. It’s made well ahead of time, and so it is perfect for a party.

6 large eggs
1 cup sugar
1 tablespoon water
1/4 teaspoon cream of tartar
4 ounces unsweetened chocolate, coarsely chopped
1 1/2 teaspoons pure vanilla extract
1/2 cup unsalted butter (1 stick), room temperature
1 store-bought 9-inch graham cracker crust or basic baked piecrust




Put the eggs, sugar, water and cream of tartar in a medium saucepan and stir to blend. Add the chocolate and cook over low heat, stirring constantly, until the chocolate melts, the mixture is smooth and a candy thermometer inserted in the chocolate, but not touching the bottom of the pan, reaches 160° F. Remove from the heat immediately. Do not let the mixture boil.

Cool quickly by setting the saucepan in a larger pan filled with ice and cold water.

Stir the pie filling vigorously until its temperature is between 80° F to 90° F. Remove the pan from the ice water bath and stir in the vanilla.



In the bowl of an electric mixer, beat the butter on medium speed for 3 to 4 minutes or until light and fluffy. Add the cooled chocolate mixture and beat on high speed for 4 to 5 minutes until completely mixed and full bodied. Pour into a pie shell, smooth the surface, cover loosely and refrigerate for at least 6 hours before serving chilled.
