Banana Bread

1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon baking powder
1/8 teaspoon salt
1 cup sugar
1 cup bananas, mashed
2 egg whites
1/4 cup oil




Preheat oven to 350 F. In a large mixing bowl, combine flour, baking soda, cinnamon, ginger, baking powder and salt. In a medium mixing bowl, beat together sugar, banana and egg whites. Add oil and mix well. Stir flour into banana mix. Pour into lightly greased 8x4x2-inch loaf pan and bake for 55-60 minutes. Cool in pan 10 minutes, then cool on wire rack.
