West Indies Salad

1 medium onion, finely chopped
1 pound fresh lump crabmeat
Salt and pepper
1/2 cup salad oil
1/2 cup cider vinegar
1/2 cup ice water

Layer half of onion in large mixing bowl. Arrange crabmeat on onion layer. Sprinkle remaining onion over crabmeat. Season with salt and pepper. Pour over salad in this order: salad oil, vinegar, ice water. Cover and allow to marinate from 2-12 hours (the longer, the better). When ready to serve, toss lightly but do not stir.
