Some tricks of the trade for this meal plan:
The chicken and zucchini can be made in advance and kept in the refrigerator or freezer for a quick week night dinner. Likewise, the spicy meatballs can be prepared well in advance and frozen. Couscous will cook in minutes while you heat up the chicken and zucchini or meatballs.
Traditional Moroccan couscous is often mixed with varying combinations of cinnamon, cumin, turmeric and nutmeg. Dried fruits such as apricots and currents or raisins are added along with nuts like pistachios, cashews and almonds. You can choose any or none of these. Cook the couscous in vegetable stock or chicken stock instead of water for more flavor.
Dried fruit chutney has a duel purpose; it can be served as an appetizer spooned over a cream cheese topped cracker or as a side to the chicken and zucchini or meatballs. This chutney is also very good when served with pork. It will keep well refrigerated for 3-4 weeks in an airtight container.
This dessert is sinfully delicious and easily prepared but figs are not always available. While figs are usually available in early fall thru early winter, you can substitute bananas or pears in this dessert.
