Chipotle Cherry Pork Salad

3 tablespoons honey
4 tablespoons dried cherries
1/3 cup apple cider vinegar
1/2 cup canola oil
1 pork tenderloin
1/2 cup Vegetable Oil
2 MissionĀ® Corn Tortillas, cut into thin strips
1 5 oz. bag baby salad greens
1-1/2 cups jicama, peeled and cut into thin strips
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 orange, cut into segments
1/2 cup Pepitas, roasted and salted (raw pumpkin seeds)

1: Combine dressing ingredients in food processor (or whisk in a mixing bowl). Reserve half as dressing and marinate pork loin in remaining half. Cover and refrigerate overnight.
2: Preheat broiler. Remove pork from marinade and place in broiler. Broil for 6 minutes per side or until firm. Remove and allow to rest for 10 minutes. Meanwhile, prepare the tortilla strips. Heat oil in a skillet over medium high heat. Place tortilla strips in skillet and cook until crisp and golden brown. Drain on a paper towel lined surface.
3: Meanwhile, arrange salad ingredients on a serving platter. Slice tenderloin and place on top of salad. Top with tortilla strips and serve with cherry chipotle dressing.
