Herbed Lemon Sauce
This quick sauce perks up the flavor of leftover veggies and sandwiches!
Serves: 8
Prep Time: 5 minutes
Cook Time: 10 seconds


fresh lemon juice, from 1/2 lemon
grated lemon zest, from 1/2 lemon
1/2 cup margarine, softened, or extra light corn oil spread
1 1/2 teaspoons poons chopped fresh basil

In a small, microwave-safe bowl, combine all ingredients. Stir well, cover, and refrigerate for at least 1 hour.

Uncover and microwave at high (100 percent) power for 5 to 10 seconds, just to soften. Take care the mixture does not liquefy.

Serve over cooked asparagus, cauliflower, broccoflower, squash, or potatoes.

You may substitute 1/2 teaspoon dried herbs, crushed.
