Crab and Cucumber Fingers
Hot and spicy aficionados will love these morsels.

6 ounces cucumber, peeled and cut into twelve 1/2-inch slices
1 tablespoon fresh cilantro, finely chopped
2 tablespoons reduced sodium soy sauce
2 tablespoons rice vinegar
3/4 teaspoon sugar
3/8 teaspoon white pepper
1 can (6 ounces) crabmeat, drained and picked over
paprika, (optional) for garnish

Carefully hollow out a shallow well in each cucumber slice, taking care to leave the bottoms intact.

In a mixing bowl, combine the cilantro, soy sauce, vinegar, sugar, and white pepper. Add the crabmeat and mix thoroughly.

Mound a tablespoon of the mixture into each cucumber. Dust, if desired, with paprika.
