Marinated Herbed Chicken
Get your grill going with these brightly flavored, grilled chicken breasts, seasoned with lemon and lots of fresh herbs.

2 1/2 pounds skinless, boneless chicken breast half, pounded to 1/2-inch thick
2 lemon
1/3 cup Crisco® canola oil
2 teaspoons dried parsley flakes or 2 tablespoons chopped fresh Italian (flat-leaf) parsley
2 tablespoons chopped fresh chives or 2 teaspoons freeze-dried chives
1 tablespoon chopped fresh thyme leaves or 1 teaspoon dried thyme leaves, crushed
1/2 teaspoon   dried oregano leaves, crushed or 1 1/2 teaspoons chopped fresh oregano leaves
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper




Grate 1 1/4 teaspoons zest and squeeze 1/2 cup juice from the lemons.

Stir the lemon juice, lemon zest, oil, parsley, chives, thyme, oregano, garlic powder and black pepper in a shallow, nonmetallic dish or a gallon size resealable plastic bag.  Add the chicken and turn to coat.  Cover and refrigerate for 2 hours or overnight.  Remove the chicken from the lemon juice mixture.  Discard the lemon juice mixture.

Lightly oil the grill rack and heat the grill to medium.  Grill the chicken for 10 minutes or until cooked through, turning it over once halfway through the grilling time.

Ingredient Note: We develop our recipes using a 4-to 5-ounce skinless, boneless chicken breast half per serving. However, there are a range of sizes available in-store, from the butcher counter to the meat case and the freezer section. Use whichever you prefer- just follow the recipe as written above for the best result. If you're using larger chicken breasts they may require a little longer cooking time.
