Chili Meatloaf and Potato Bake
Salsa, chili powder and French fried onions add a pop of flavor to this tasty turkey meatloaf that's served with cheesy mashed potatoes. Dinner just doesn't get any better!

1 1/2 pounds ground turkey
3/4 cup salsa fresca
1 tablespoon chili powder
1 egg, beaten
1 container (2.8 ounces) French's® French Fried Onions (Original or Cheddar) (about 1 1/3 cups)
1/2 teaspoon salt
1/3 teaspoon ground black pepper
2 cups prepared Idahoan® mashed potatoes
2 cups shredded Mexican cheese blend (about 8 ounces)

Heat the oven to 375ºF.  Mix the turkey, salsa, chili powder, egg, 2/3 cup fried onions, salt and black pepper in a large bowl.  Press the turkey mixture into a 9-inch square baking dish.
Bake for 25 minutes until or until the turkey mixture is cooked through.  Pour off any fat.
Stir the potatoes and 1 cup cheese in a medium bowl.  Spread the potato mixture over the meatloaf.  Sprinkle with the remaining cheese and onions.
Bake for 5 minutes or until the cheese is melted and the onions are golden brown.
