Creamy Potato Salad
This potato salad is great for a party.
Serves: 8-10
Prep Time: 10 minutes
Cook Time: 10-15 minutes


7 large boiling potatoes
2 tablespoons bacon drippings
1 1/2 tablespoons white vinegar
1 cup mayonnaise
1 cup sour cream
6 hard-cooked eggs, grated
2 medium (or less) onions, grated
Salt and pepper
7 slices bacon, fried crisp

Boil potatoes until tender; peel and cut into bite-sized pieces. Mix bacon drippings and vinegar and pour over hot potatoes; let cool. Mix mayonnaise and sour cream together. Add eggs, onions, salt and pepper to potatoes. Fold in the mayonnaise mixture. Crumble bacon over top. May be served hot or cold.
