Gingery Banana Pudding

2 packages (3 1/4 ounces each) vanilla pudding mix
|
1/4 teaspoon ground ginger, optional
|
3 1/2 cups milk
|
4 egg whites, at room temperature
|
1/8 teaspoon cream of tartar
|
1 cup + 2 tablespoons sugar
|
3 medium bananas, sliced
|
30 gingersnap cookies
|

1. In OvenWorks™ 2-quart Square casserole, stir together pudding mix and ginger; stir in milk. Microwave on High 6-8 minutes, stirring a couple of times, until mixture has thickened. 2. Meanwhile, preheat oven to 450° F. In large bowl, with electric mixer at medium speed, beat egg whites until foamy; add cream of tartar and increase speed to high. With mixer running, gradually add sugar and continue beating until stiff, glossy peaks form. 3. Gently fold bananas into pudding, then place gingersnaps all around edge of dish, gently pushing cookies into pudding to form a border; arrange remaining gingersnaps on top of pudding. 4. Spread or pipe egg-white mixture over gingersnap-covered pudding, taking care to seal mixture to inside edge of casserole so it doesn't shrink during baking. Bake in preheated oven 5-7 minutes until meringue is set and lightly browned. 5. Remove from oven to wire rack to cool about 15 minutes. Serve warm or refrigerate and serve cold; garnish, if desired, with additional gingersnaps. To serve, spoon into dessert dishes.
