Apple-Maple Oatmeal
Dried apples are delicious, but you can substitute another dried fruit, such as bananas, apricots, or raisins, if you like. |

3 1/2 cups water
|
2 cups old-fashioned rolled oats, or quick-cooking rolled oats
|
1/2 cup chopped dried apple rings
|
1/4 cup maple syrup, plus more for drizzling
|
1/4 teaspoon salt
|

In a large saucepan, bring the water to a boil. Add the oats, dried apples, maple syrup, and salt, if using.
Return to the boil, reduce the heat, and simmer for about 5 minutes or until the liquid is absorbed. (Cook for about 1 minute for quick-cooking oats.)
Let the oatmeal stand off the heat for about 5 minutes until it reaches the desired consistency. Serve right away drizzled with more syrup.
