2 large eggs
1 cup unsalted butter, softened
2 teaspoon vanilla
1 cup rolled oats
1 cup corn flakes, lightly crushed
1 cup sugar
1 cup brown sugar
1 cup raisins
3/4 cup sweetened shredded coconut
1 cup chocolate chips
3/4 cup chopped walnuts
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 - teaspoon salt

Preheat the oven to 375° F.

In the bowl of an electric mixer, beat the eggs with the butter and vanilla until light and fluffy. Add the oats, corn flakes, sugars, raisins and coconut and beat on low speed just to mix. Finally, stir in the chocolate chips and walnuts.  

In a separate bowl, whisk together the flour, baking powder, baking soda and salt. Add flour mixture to the batter and mix on low speed to incorporate.

Drop rounded tablespoons of dough onto buttered baking sheets, leaving about 1 1/2 inches between each one. Bake for 12 to 15 minute or until nicely browned. Let the cookies cool for about 5 minutes on the baking sheets and then transfer to wire racks to cool completely.
