1 1/4 cups confectioners' sugar
3 tablespoons unflavored gelatin
1/2 cup cold water
2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup hot water
1/8 teaspoon salt
2 egg whites
1 1/4 teaspoons vanilla, or favorite flavor
food coloring
sprinkles, or Jimmys

Grease a 13x9x2 inch baking pan and lightly dust with confectioner's sugar or sprinkles.

In a large bowl, add cold water and sprinkle gelatin over the water let stand.

In a large saucepan, heat the sugar, corn syrup, hot water and salt over medium-low heat until the sugar is dissolved. Increase the heat to medium and boil the mixture for 10-12 minutes until it registers roughly 240 degrees on a candy thermometer. Immediately remove the pan from the heat and pour sugar mixture into the gelatin mixture.

Using a hand-held or standard mixer, beat the hot mixture on high speed for 8- 10 minutes until it is white, thick, and tripled in volume.

In a separate bowl beat the egg white until they hold stiff peaks. Gently whisk the egg whites and vanilla into the marshmallow mixture until just combined. If you wish to change the flavor or add food coloring do so now.

Spread mixture evenly into the prepared pan and dust with confectioner's sugar or sprinkles. Chill the mixture covered for at least 4 hours and invert onto a cooling rack. Use a knife to cut into individual marshmallows or use a greased cookie cutter for shapes.
