4 boneless chicken breast halves
2 medium sweet onions, cut into rings
1 can (20 oz.) pineapple rings in juice, drained
1 jar (16 oz.) Pace® Picante Sauce
2 tbsp. chopped fresh cilantro
2 tbsp. packed brown sugar
1 tbsp. grated fresh ginger root
1 tbsp. cooking sherry
1 tsp. soy sauce
2 cups hot cooked regular white or jasmine rice

LINE shallow baking pan with aluminum foil. Place chicken in prepared pan.

TOP with onions and pineapple. Mix picante sauce, cilantro, brown sugar, gingerroot, sherry and soy and pour over all. Top with foil and seal edges.

BAKE at 350°F. for 45 min. or until done. Serve with rice. Garnish with additional cilantro if desired.
