Chocolate Chip Biscotti
Chocolate chips add the right kind of sweetness to these traditional Italian biscuits.

3 cups all-purpose flour
2 cups sugar
1/2 teaspoon salt
1 teaspoon baking powder
4 large eggs
1 teaspoon vanilla extract
1 cup (6 ounces) miniature semi-sweet chocolate chips

Preheat the oven to 350°F. Lightly coat two large baking sheets with nonstick cooking spray.

In the bowl of an electric mixer, mix together all the ingredients except the chocolate chips to form a dough. Add the chocolate chips and mix into the dough. You might have to do this with a wooden spoon rather than the electric mixer.

Divide the dough in half and form a rectangle on each baking sheet that is about 3 inches wide by 12 inches long and 1 inch thick. Bake for 25 to 30 minutes or until firm and lightly golden. Remove the baking sheets from the oven and reduce the oven temperature to 325°F.

Allow the loaves to cool for about 5 minutes. Cut into 1/2-inch-thick slices and as you do, return the slices to the baking sheets, cut sides down.

Bake for 15 minutes and then turn the cookies over. Bake for about 15 minutes longer until very crisp. Cool the biscotti on wire racks and when completely cool, serve. Store them in an airtight container. 

Variation: To make Chocolate Chocolate Chip Biscotti, replace 1/2 cup of the flour with 1/2 cup of unsweetened cocoa. Proceed as directed.
