8 ounces yolkless broad noodles
2 tablespoons fresh chives, snipped
salt, to taste
ground black pepper, to taste

Bring a large saucepan of water to a boil over high heat. Stir in the noodles and cook for about 10 minutes, stirring occasionally, until tender but still firm to the touch.

Lightly drain the noodles, reserving 1/4 cup of the cooking liquid. Return the noodles to the pan, along with the chives and reserved liquid. Toss over high heat for a few seconds, until the liquid has been absorbed. Season with salt and pepper.
