Tomato and Dill Sandwiches with Smoked-Caper Spread

2 8-ounce packages cream cheese, at room temperature
1/2 cup parsley
4 tablespoons lemon juice, fresh
2 tablespoons whipping cream
2 tablespoons capers, drained
1/2 pound smoked salmon
12 slices pumpernickel bread
2 large tomatoes, thinly sliced
dill, sprigs

Process the cream cheese, parsley, lemon juice, cream, capers and 6 ounces of salmon in a food processor until smooth. Add the remaining salmon and mix until just incorporated. Cover and refrigerate.

Spread 6 slices of the bread with the salmon mixture.Top with tomato slices and dill sprigs and slice in half.
