Fish Broth
Homemade fish broth is easily prepared and full of good flavor. |

2 pounds sole, bones,heads and trimmings
|
1 medium-size onion, sliced
|
1 carrot, sliced
|
1 leek, sliced
|
1 stalk celery, sliced
|
6 stems parsley
|
1/2 teaspoon dried thyme
|
1 bay leaf
|
6 white peppercorns
|
1 cup white wine
|

Break up the fish bones, chop the trimmings, if necessary, and put them in a large saucepan. Add the remaining ingredients and enough cold water to cover. Bring to the boil over high heat and skim any foam that rises to the surface. Reduce the heat to low and simmer, partially covered, for 30 minutes.
Pour through a fine strainer and use the broth as required.
