Match Point Plum Shortcakes with Dream Sauce

1 1/2 cups buttermilk pancake mix
9 tablespoons sugar, divided
1 pinch ground nutmeg
2 tablespoons butter or margarine
1/2 cup nonfat milk
Non-stick cooking spray
8 medium thinly sliced plums, (or 1 1/3 lb.)
1 cup lowfat lemon yogurt
1/2 cup nonfat sour cream

Preheat the oven to 425 degrees F.

For the shortcake, mix the baking mix with 3 tablespoons of sugar and the nutmeg. Cut in margarine or butter with fork until evenly crumbly. Add the milk and stir just until mixed.

Coat an 8-inch layer cake pan with nonstick spray. Pour the batter into the pan and bake for 15 to 20 minutes or until a toothpick inserted into center comes out clean. Cool in the pan set on a wire rack for 15 minutes, invert onto the rack and cool completely.

Meanwhile, combine the sliced plums with 5 tablespoons of sugar. Cover and chill.

For the filling, blend the yogurt with the sour cream and 1 tablespoon of sugar.

To assemble, split the cake into 2 layers. Place the bottom layer on a plate and spread with half the filling. Spoon half the plums over. Top with the other cake layer. Cut the cake into wedges and spoon some of remaining filling and plums over each cake serving.
