Walnut-Cinnamon Coffee Cake

1/2 cup chopped walnuts
2 tablespoons brown sugar
1 teaspoon cinnamon
2 cups all-purpose flour
1/2 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup vegetable oil
3/4 cup buttermilk
1 medium-size egg, lightly beaten
1 teaspoon vanilla extract

Heat the oven to 350 degrees. Lightly oil an 8-inch-square baking pan.

Combine the walnuts, brown sugar and cinnamon in a small bowl. Combine the flour, sugar, salt, baking powder and baking soda in another bowl and mix to blend. Combine the oil, buttermilk, egg and vanilla in a third bowl and add to the dry ingredients. Stir just to combine; do not overmix.

Spread half of the batter over the bottom of the baking pan. Sprinkle with half of the walnut mixture. Carefully spread the remaining batter over the walnuts and then sprinkle with the remaining walnut mixture. Bake for about 35 minutes until a knife inserted into the center of the coffee cake comes out clean.
