12 ounces (about 2 bunches) arugula
1 tablespoon Dijon mustard
1/4 cup honey
2 tablespoons balsamic vinegar

Stem the arugula, cut it into bite-sized pieces (about 6 cups), and place in a large bowl.

Whisk the mustard and honey together in a small bowl, then whisk in the vinegar until well blended. Pour over the arugula and toss to coat.
