1 can (15 1/2 ounces) black beans
|
1/4 cup nonfat sour cream
|
1 teaspoon olive oil
|
1/4 teaspoon salt
|
1 teaspoon hot sauce
|
1/4 cup yellow corn meal
|
3/4 cup salsa, prepared
|

Rinse and drain the beans. Transfer them to a food processor, along with the sour cream, seasonings, and 2 tablespoons of the cornmeal. Process to a smooth puree. Scrape into a bowl, cover, and refrigerate for at least 10 minutes.
Preheat the broiler. Line a broiler pan or baking sheet with aluminum foil.
Using 1/4 cup of the bean puree for each, form six 3-inch-diameter patties about 1/2-inch thick. Put the remaining 2 tablespoons of cornmeal onto a plate and coat the top and bottom of each cake with cornmeal.
Transfer the patties to the prepared pan. Position 2 inches from the heat source and broil for 3 minutes; flip the patties, and broil for about 2 minutes on the other side, until just beginning to brown.
Put 2 tablespoons of the salsa onto each of 6 small plates and top each with a bean cake.
