Wisconsin Mashed Potato Spice Cake

2 cups sugar
1 cup butter or margarine, softened
4 eggs, seperated
1 cup mashed potatoes, room temperature
1 cup chopped walnuts
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
2 1/2 cups all-purpose flour
1/2 cup milk
2 teaspoons baking powder
confectioners' sugar, (if desired)
ice cream, (if desired)

Preheat oven to 350°F. Grease and flour 9x13-inch pan; set aside. Cream sugar and butter in large bowl with mixer until fluffy. Add egg yolks, potatoes, walnuts, cinnamon, cloves and nutmeg; beat until smooth. Stir in flour, milk, and baking powder. Beat egg whites in small bowl with mixer until stiff. Fold egg whites into batter. Pour into prepared pan. Bake 45 minutes, or until toothpick inserted in center comes out clean. Dust with confectioner's sugar, or serve topped with your favorite ice cream.
