Mini Walnut Apple Pies

1 tablespoon butter
1 tablespoon brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/3 cup apple juice
1 large green apple, peeled, cored and chopped
1/3 cup California walnuts, chopped
1 package (1.9 ounces) mini filo shells

Preheat the oven to 350º F.

Melt the butter in a medium saucepan with the brown sugar and spices.

Add the apple juice and the chopped apple. Stirring frequently, cook the mixture over medium-low heat for 15 minutes or until the apple is very soft and the apple juice has cooked off. 

Stir in the walnuts and spoon the mixture evenly into the filo shells.

Place the filled filo shells on a small baking sheet and bake for 10 minutes.
Cool and serve.
