Chocolate Mint Cake

2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup packed brown sugar
1/2 cup unsweetened cocoa
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 cups skim milk
1/2 cup Smucker’s® Baking Healthy
1 teaspoon vanilla extract
2 eggs
16 chocolate-covered mint patties, (miniatures)

Preheat oven to 350°F. Spray a 13 x 9 x 2-inch baking pan with nonstick cooking spray. In a bowl, combine flour, sugars, cocoa, baking soda and salt. Add milk. Baking Healthy product and vanilla extract. Beat on low speed until combined. Beat on high speed for 2 minutes. Add eggs and beat 2 minutes longer. Pour batter into prepared pan. Bake for 35 to 40 minutes or until a toothpick inserted in center comes out clean. Arrange mint patties evenly on top of hot cake; let stand 5 minutes. Carefully spread over cake. Cool and cut into squares.
