Oatmeal Icebox Cookies

1 cup shortening
1 cup brown sugar
1 cup sugar, white
2 eggs, well beaten
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon salt
1 teaspoon soda
3 cups quick-cooking oats
1/2 cup chopped pecans




Cream shortening, brown sugar and white sugar. Add eggs and vanilla; beat well. Sift flour, salt and soda together; add to creamed mixture and blend well. Stir in oats and pecans. Shape into rolls and wrap in wax paper. Chill several hours or overnight. Slice 1/4-inch thick. Bake on ungreased cookie sheets in 350 degree oven for 10 minutes.
