Ham & Cheese-Stuffed Meat Loaf

2 pounds Ground Beef or meat loaf mix (ground beef, pork and veal)
2 eggs, beaten
1/2 cup Italian-seasoned dry bread crumbs
1 cup V8® 100% Vegetable Juice
1 teaspoon dried oregano leaves, crushed
1/4 teaspoon freshly ground black pepper
2 small onion, minced (about 1/2 cup)
8 thin slices deli boiled ham (about 6 ounces)
2 cups shredded mozzarella cheese (about 8 ounces)

Thoroughly mix the beef, eggs, bread crumbs, vegetable juice, oregano, black pepper and onions in a medium bowl.

Line a rimmed baking sheet with aluminum foil with 2 inches of foil extending beyond the ends of the baking sheet.

Press the beef mixture into the baking sheet.  Arrange the ham slices on the beef mixture and sprinkle with the cheese.  Lift up one end of the foil and roll the beef mixture up like a jelly roll.  Remove the foil and place the meat loaf onto the baking sheet.  Press the seams to seal.  Spread ketchup over the meat loaf, if desired.

Bake at 350°F. for 1 hour or until the meat loaf is cooked through.  Let the meat loaf stand for 10 minutes before slicing.
