Hawaiian Meatloaf with Peanut Glaze

2 pounds lean Ground Beef
1 cup plain dry bread crumbs
1 can (8 ounces) crushed pineapple, drained
1 small green pepper, chopped (about 1/2 cup)
1 medium onion, chopped (about 1/2 cup)
1/4 cup chopped celery
2 eggs, beaten
1/4 cup milk
3/4 cup soy sauce
4 teaspoons finely minced fresh ginger root
1/2 teaspoon ground black pepper
1/2 cup orange juice
1/2 cup Jif® creamy peanut butter
2 tablespoons rice wine vinegar
2 tablespoons brown sugar
1 teaspoon minced garlic

Heat the oven to 350°F.  Thoroughly mix the beef, bread crumbs, pineapple, green pepper, onion, celery, eggs, milk, 1/4 cup soy sauce, 3 teaspoons ginger root and the black pepper in a large bowl.  Place the mixture into a loaf pan.
Bake for 50 minutes or until the meatloaf is cooked through.  Let stand for 10 minutes before slicing.

Heat the orange juice, remaining soy sauce, peanut butter, vinegar, brown sugar, remaining ginger and garlic in a 1-quart saucepan over medium-high heat to a boil, stirring constantly.  Reduce the heat to low.  Cook and stir until the mixture is thickened.
Pour 1/4 cup peanut glaze over the meatloaf during the last 5 minutes of the baking time.  Serve the remaining glaze with the meatloaf.
