Spicy Crabmeat Tostadas
Elegant or casual, these tasty tostadas are perfect for any gathering.  They feature crisp corn tortillas topped with an easy-to-make crab topping.  Sounds good, doesn't it?

6 Mission® corn tortilla
1 tablespoon vegetable oil
1/4 cup minced red onion
1/2 cup minced garlic
1 cup drained canned diced tomato
2 tablespoons minced fresh cilantro leaves
2 cups refrigerated pasteurized crabmeat
2 tablespoons lemon juice
1/4 cup chopped red pepper
1 cup shredded lettuce
1 can (2.25 ounces) sliced pitted ripe olive, drained (optional)
Pace® Chunky Salsa

Heat the oven to 350°F.  Place the tortillas onto 2 baking sheets. 

Bake the tortillas for 5 minutes or until they're golden brown and crisp.

Heat the oil in a 3-quart saucepan over medium heat.  Add the onion and cook for 5 minutes, stirring occasionally.  Stir in the garlic, tomatoes, cilantro and crabmeat and cook for 5 minutes, stirring occasionally.
Stir the lemon juice, pepper, lettuce and olives, if desired, in a medium bowl.  Divide the lettuce mixture among the tostadas.  Top with the crab mixture.  Serve with the salsa.
