Italian Fish Fillets
Baked fish fillets are enhanced by this crunchy breadcrumb coating seasoned with Parmesan cheese, garlic and thyme.  Plus, the fish is ready to serve it just 20 minutes!

2 slices Pepperidge Farm® White Sandwich Bread, torn into pieces
1/3 cup shredded parmesan cheese
1 clove garlic
1/2 teaspoon dried thyme leaves, crushed
1/8 teaspoon ground black pepper
2 tablespoons olive oil
8 (fresh or thawed frozen) tilapia or other firm white fish fillets (3 to 4 ounces each) (about 2 pounds)
1 egg, beaten

Place the bread, cheese, garlic, thyme and black pepper in a blender or food processor. Cover and blend until fine crumbs form. Slowly add the olive oil and blend until the crumbs are moistened.
Arrange the fish in a 17 x 11-inch shallow roasting pan. Brush the fish with the egg. Divide the bread crumb mixture evenly over the fish.
Bake at 400°F. for 10 minutes or until the fish flakes easily when tested with a fork and the crumb topping is golden brown.
Easy Substitution: Cod, haddock or halibut work well in this recipe, too!
