Mediterranean Strata

4 zucchini or yellow squash, thinly sliced (about 6 cups)
1 cup ricotta cheese
3 eggs
1 1/2 cups heavy cream, half-and-half or milk
2 bunches fresh basil leaves, minced (about 1 cup)
2 tablespoons all-purpose flour
1 tablespoon minced garlic
1 cup shredded mozzarella cheese (about 4 ounces)
1 1/3 cups French's® French Fried Onions (Original or Cheddar)
Diced red pepper

Heat the oven to 350ºF. Place the zucchini and 2 tablespoons water into a 2-quart microwave-safe baking dish. Cover the dish with plastic wrap and turn back one corner to vent. Microwave on HIGH for 3 minutes or just until the zucchini is tender. Drain the zucchini well.
Whisk the ricotta cheese, eggs, cream, basil, flour and garlic in a large bowl. Pour the cheese mixture over the zucchini in the baking dish. Bake for 45 minutes or until the cheese mixture is set.
Sprinkle evenly with the mozzarella cheese and onions and bake for 5 minutes or until the onions are golden brown. Garnish with diced red pepper, if desired.
