Beef and Vegetable Stir-Fry
A colorful presentation of beef strips, zucchini matchsticks, and carrots makes an easy, quick and attractive meal for the family.

3/4 pound boneless round steak
1 teaspoon Vegetable Oil
1/2 cup carrot, sliced
1/2 cup celery, sliced
1 onion, peeled and sliced
1 tablespoon soy sauce
1/8 teaspoon garlic powder
1/8 teaspoon black pepper, ground
2 cups zucchini, julienned
1 tablespoon cornstarch
1/4 cup water, julienned

Trim steak and slice across the grain into thin strips about 1/8x3-inches long.

Heat oil in a skillet and stir-fry the beef over high heat, stirring constantly, until cooked, 3 to 5 minutes.

Reduce heat and add carrots, celery, onion, soy sauce, garlic powder and pepper. Cover and cook until carrots are slightly tender, 3 to 4 minutes. Add zucchini and cook until tender-crisp, 3 to 4 minutes.

Mix cornstarch and water until smooth. Add slowly to beef mixture, stirring constantly. Cook until thickened. Serve over hot rice.
