Herb-Marinated Chicken
This is a wonderful way to serve chicken on a weekend when you have time for advanced preparation.

2 large cloves garlic
4 chicken breast halves, with bones and skin
1/2 cup olive oil
1/4 cup lemon juice
2 tablespoons balsamic vinegar
2 teaspoons dried thyme
2 teaspoons dried rosemary
2 bay leaves, crushed
6 sprigs parsley

Crush the garlic cloves and rub them over the chicken. Put the chicken with the garlic in a non-aluminum container and season with salt and pepper. Add the remaining ingredients and turn the chicken to coat it in the mixture. Let the chicken marinate for 1 to 2 hours, turning several times.

Light the charcoal grill. Remove the chicken from the marinade and sprinkle it lightly with salt. Grill the chicken, skin side down, for about 10 minutes until the skin is crisp and golden brown. Turn the chicken and continue grilling for about 20 minutes until the juices run clear when the chicken is pierced with a knife. Baste frequently with the marinade during cooking.
