Smothered Hashbrowns
Great for that backyard summer barbecue.
Serves: 4-6
Prep Time: 30 minutes
Cook Time: 1 to 2 minutes


1/4 cup cooking oil
3 medium potatoes, washed (peeled, if desired)
1/4 cup chopped onion
6 eggs
1/4 cup milk
1/2 cup Shredded Cheddar cheese
salsa, (if desired)

Heat oil over medium/high heat in a large nonstick frying pan. Shred potatoes. Fold onions into potatoes. Place large spoonfuls of potatoes into hot oil forming patties. Salt patties as desired. Brown on both sides. While patties are cooking, mix eggs and milk. Beat well. Reduce heat to medium. Pour eggs over patties, lift patties to allow eggs to flow under patties. Cook for 1-2 minutes. Turn patties. Spread salsa over patties, sprinkle with cheese and cover to allow the cheese to melt.
