Bacon Scallion Burgers
Grilled hamburgers are at all-time summer treat. These are mixed with crumbled bacon and chopped scallions for rich, satisfying flavor. For a little more punch, top the burgers with a strip of cooked bacon, if desired.

1 pound ground beef
3 strips bacon, cooked and crumbled
2 thinly sliced scallions, white and green parts
4 hamburger buns
4 leaves lettuce
4 slices tomato
4 slices red onion
salt and pepper, to taste

Prepare a charcoal or gas grill so that the coals or heating elements are medium-hot.

In a bowl, mix together the ground beef, crumbled bacon, scallions, salt and pepper. Form the meat into 4 patties and grill, turning once, for 5 to 7 minutes on each side, or until the burgers reach the desired degree of doneness.

Put the lettuce on the buns, top with burgers, onion slices and tomatoes. Sandwich the buns and serve immediately.

Serving Suggestion:  Serve with deli potato salad and watermelon.
