1 (12 oz) can Spam Lite luncheon meat, cubed or 1 cup onion, chopped or 2/3 cup green bell pepper, chopped or 1/2 cup celery, chopped or 2 cloves garlic, minced or 1 (14 1/2 oz) can tomatoes, cut up or 1 (10 3/4 oz) can chicken broth, low-sodium or 1/2 tsp dried thyme or 6 drops hot pepper sauce or 1 bay leaf or 1 cup long grain rice or 2 tbsp Parsley, chopped

In large non-stick skillet or 3-quart non-stick saucepan, saute SPAM, onion, green pepper, celery, and garlic until vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaf. Bring to a boil; stir in rice. Cover. Reduce heat and simmer 20 min or until rice is tender. Discard bay leaf. Sprinkle with parsley.
