Vegetable cooking spray
1 lb. sweet Italian sausage, cut into 1-inch pieces
2 large carrots, sliced (about 1 1/2 cups)
1 large onion, chopped (about 1 cup)
2 cloves garlic, minced
3 1/2 cups Swanson® Vegetable Broth (Regular or Certified Organic)
2 tsp. dried oregano leaves, crushed or 2 tbsp. chopped fresh oregano leaves
1 bay leaf
2 cups cubed red potatoes
1/2 cup uncooked, dried lentils
2 cups coarsely chopped broccoli rabe

SPRAY saucepot with vegetable cooking spray. Add sausage and cook until browned.

ADD onion, carrots and garlic and cook until tender.

ADD broth, potatoes, lentils, bay leaf and oregano. Heat to a boil. Cover and cook over low heat 40 min. or until lentils are done.

STIR in broccoli rabe and cook 5 min. Remove bay leaf.
